I watched a BBC children’s program with Lisa Faulkner last night with my girls. I watched her in awe when she won celebrity Masterchef in the UK a few years ago. She was absolutely brilliant (and still is it seems which is very nice to read!). We watched the programme where they made Peanut Butter Cookies with Banana Ice Cream of course it looked to delicious not to try, but my desire not to eat so much sugar and refined carbs made me make my own version… In Sweden we call it a Sandwich ice cream, the lack of gluten made it a little brittle (read VERY) hence you had to eat it on a plate, but it was pretty good…
For the banana ice cream
- 2 ripe bananas
- 1 dl of greek or turkish yogurt
- 1 tbsp honey
Mix everything smooth and then freeze – fork it through 2-4 times over a 2 hour period to get rid of any ice crystals. EAT!
For the peanut butter cookies
- 75 grams of butter (room temperature makes it easier to mix)
- 1 dl of coconut sugar
- 1 egg
- 1 dl of oat flour
- 1 tbsp of honey
- 4 tbsp of peanut butter
- 1 tsp baking powder
- a handful of salted peanuts (here I added these on top of the ice cream before I served as the kids did not want them, a good and simple way to vary this to kids with a fear of salted peanuts…).
Mix the butter and the coconut sugar and then add the rest of the ingredients. Dollop out 8 blobs of mixture and cook in the middle of the oven until golden (about 15 minutes).
