Flapjacks

Since Easter I have been on a sugar hunt … but have finally been getting at least better… Had two play dates yesterday so a house full of children and terrible weather so we made chocolate balls (some birch sugar in these and I think they may have been good as they disappeared instantly).  Secondly we made some flapjacks, I have kind of forgotten flap jacks, but they are great!

Flapjacks (oven 160 degrees C) – makes about 12 bars

  • 50 grams butter or coconut oil for dairy free
  • 2 tbsp peanut butter
  • 2 tbsp date syrup
  • 1 tbsp honey

Melt the butter peanut butter, date syrup and honey

  • 1 ripe mashed banana
  • handfull of raisins
  • large pinch of salt
  • enough oats to make it a firm spreadable consistency
  • 50 grams of dark chocolate (minimum 70%) to be melted on top – optional

Place in oven proof dish, bake for around 50 min in the middle of the oven. Add melted chocolate…
