Salmon and avocado – starter or light lunch – dinner party worthy

This is definately dinner party worthy and when I can get a chunk of cold smoked salmon I tend to do this. My love of Lidl will show through here as they often sell it!

300 grams cold smoked salmon

2 ripe avocados

3 tbsp greek yougurt or dairy free equivalent

2 tbsp mayonnaise

2 tbsp olive oil

1/2 tsp black pepper

2 tbsp grated horse radish (pepparrot)

The juice of half a lemon

Mix all the ingredients except the salmon into a thick dressing. Chop the salmon and avocado into small cubes and mix into the dressing and serve on top of slice of gluten free bread or just with some rocket on top.

Now just for the guests and we will be good to eat!IMG_0467
