Chocolate Snack bites and being a foreigner!

Today is a bank holiday or a Red day as we say in Sweden hence Mr. M and I are drinking coffee and the kids are running around, as we were watching the bonfire late they are a little bit grumpy…

Today the stables 200m from our house has an open day (you have to have your own horse to ride their normally) hence we thought we would go along, they have Fika.  If there is cake it is hard not to eat it… hence I thought I would bring mine, and if all fails have both!

IMG_0547Chocolate snack bites

2dl of mixed fruit soaked in some warm water for 10 min (I used 2 figs, handful of apricots and some raisins)

Mix this with a blender after soaking (remove the excess water first!)

Blend 1 dl walnuts and 1 dl of almonds (any nuts will do!) also I like it when still some chunks and bits of nuts.

IMG_0550Add mixture of the below dry ingredients to fruit paste:

  • 1 tbs cacao
  • 1/2 tsp cinnamon
  • pinch of salt
  • 1 tbs linseeds
  • 1 tbs sesame seeds
  • 50 grams dark chocolate chopped

Roll in dessicated coconut (or decapitated as I thought it was called for many years) store in the freezer and take out a few minutes before eating. This is the problem of being a foreigner both in Scotland where I moved when I was 12 and now again feeling like one in my home country Sweden. Being away for 23 years means I am somewhat lost at times.  For my friends who told me an Orgie was a lot like a melon before I was sent into the fruit shop as a 15 year old… I have not forgotten! 🙂
